🍯 Honey Garlic Salmon Quinoa Power Bowls

A sweet-savory salmon bowl packed with protein, whole grains and colorful vegetables. Honey-garlic salmon is appearing in current healthy dinner planning, while grain bowls remain an easy way to combine protein, vegetables and fiber-rich carbs.

🛒 Ingredients

  • 4 salmon fillets, about 5 oz each
  • 2 cups cooked quinoa
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup shelled edamame
  • 1 tbsp olive oil
  • Salt and black pepper

Honey Garlic Sauce

  • 3 tbsp honey
  • 3 tbsp low-sodium soy sauce
  • 3 garlic cloves, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp grated ginger
  • 1 tsp sesame oil

👩‍🍳 Instructions

1. Prepare the sauce.
Whisk honey, soy sauce, garlic, lemon juice, ginger and sesame oil until combined.

2. Roast the vegetables.
Heat oven to 425°F. Toss broccoli and bell pepper with olive oil, salt and pepper. Roast for 15–18 minutes.

3. Cook the salmon.
Pat salmon dry and lightly season. Heat a nonstick skillet over medium-high heat. Cook salmon about 4 minutes on the first side.

4. Glaze it.
Turn salmon over. Pour in the honey-garlic sauce and cook another 3–5 minutes, spooning the thickening sauce over the salmon.

5. Build the bowls.
Divide quinoa among four bowls. Add roasted vegetables, edamame and salmon. Spoon remaining glaze over everything.

Use brown rice or farro if you don’t have quinoa. Add shredded cabbage for even more fiber.
